Raspberry Cobbler - From PDX with Love

Raspberry Cobbler

Saturday we took the boys raspberry picking and we had such a blast! My only problem with the whole adventure was figuring out what to do with the 6 pounds of raspberries we picked!! Yeah…

Raspberries

The possibilities are endless: raspberry pie, raspberry cobbler, raspberry ice cream, raspberry jam. And the list is practically endless! Vinaigrettes, saldas, marinades, and on, and on…and on.

But after a few hours of sorting through all my cookbooks I decided to go with Raspberry Cobbler!!

This was my very first cobbler ever!! I always had the feeling that cobbler was more like a science. I had the notion that I was practically impossible to get it right, I mean, it sounds quite fancy to me.

At the end I settled in for Martha Stewart’s Raspberry Cobbler. I was, once more in life, proven wrong! Making cobbler is easier than making pie, and I’ve made pie before so I know it to be true.

Tyler loved it!! And for someone who wasn’t even hungry he made a third of the cobbler disappear! I am not kidding!! He came for second and thirds.

I’ve never had any kind of cobbler before since I am more of a cake kind of person but I must say that I truly liked it! It was tart yet sweet. And the biscuit topping made it even better! Love me some bread!

After I ate my piece I was told I was supposed to add whipping cream to it…oops! Silly me. I guess that next time I will add some, that is, of course, if my husband hasn’t eaten it all up by then!!

What is your favorite kind of cobbler?

Yum! After your last raspberry picking post I was hoping for recipes to go along with it. While I’ve never had raspberry cobbler, I definitely want to try it. My favorite cobbler is either apple or blueberry (or apple blueberry!).

Cobblers are so easy to make!! We might go blueberry picking in a week or so, maybe I can try a blueberry cobbler…or blueberry muffins!!

This. looks. so. GOOD. I adore cobbler, but I can never manage to make it without it turning into much and ick.

I learned the hard way not to fill the container too much….I tried to make personal sized cobblers on a muffin tin and it overflowed. When making cobbler make sure to place a cookie sheet under it so if any messes happen the cookie sheet catches it. Saved me a day of oven cleaning!

For us, it’s all about the blueberries. We go picking 2 or 3 times a week and devour them! That cobbler looks delicious! Yum!
