Just the other day Ty and I had cream of chicken. We usually make Minute Rice and add some cream on chicken with peas on top. We always cook extra rice and not on purpose, it just happens.
Later in the afternoon, since it was still hot and I din’t feel like cooking, we had rotisserie chicken for dinner. Which we ate little of.
Last night I decided to use up all of our leftovers so I came up with fried rice with rotisserie chicken!
I got this recipe from my sister (it’s her fried rice version tweaked by me due to lack of will to cook).
All you need is:
- Diced carrots
- Diced zucchini
- Diced onion
- Minced garlic
- Chicken
- Leftover rice

My sister’s version also has diced potatoes and bacon bits, so feel free to add those to yours if you’d like.

First you start sautéing the onion and garlic together. Once the onion is getting transparent add the zucchini. Cover, make sure to stir the ingredients so they don’t stick to the pan. Once the zucchini is almost cooked add the carrots. I don’t like mushy carrots (honestly I don’t like cooked carrots at all) so I didn’t let them cook for too long, so this step will really depend on how you like your carrots. At this point you’ll need to add some olive oil, instead add some soy sauce to taste. Mix well. Add the chicken.
Once the chicken warmed up add the rice. Mix well and add some more soy sauce to make the rice brown. Make sure you don’t add too much, you don’t want your rice to be too salty!
Rotisserie chicken and soy sauce taste oh so good! We weren’t even that hungry and we all had second! I even thought about having some more! Oh so good!
I think next time I’ll be using the flash while snapping pictures of my food!!
