Cooking with Xtrema {Cajun Chicken Salad}

I have cooked with ceramic pots before…and a pizza stone, which I love! I really like how the ceramic keeps the food warm for longer, which works wonders with soups and stews. Xtrema gave me the opportunity of reviewing their 3pc 10″ Ceramic Skillet with Handle Pot Holder and I love it too! So intead of doing the whole intro to the company, which I am 100% sure you’ve heard of before, I decided I am going to share a favorite recipe of mine with you that I cooked on my new Xtrema skillet!

{Cajun Chicken Salad}

So, it is extremely easy. All you’ll need is:

  • 2 Chicken Breasts
  • Cajun spices
  • Romaine lettuce
  • Caesar dressing
  • Croutons
  • Parmesan cheese
  • Pepper to taste

 

 

I used King of the Cajun seasoning, which we get at Portland’s Saturday Market, and it is delicious! So, sprinkle as much cajun spices as you like and cook our chicken. And if your husband is just like mine, he’ll come and hijack your chicken and fillet it for you…so you’ll have to re-season it again. I tend to forget things sometimes.

What I do to cook the chicken, I flip it over every 3 minutes or so so that it cooks evenly and the sides won’t burn.

 

 

Once your chicken is done slice it. On to the salad. Cut and wash your lettuce. We use Romaine Lettuce for salads, but you can use whatever you like and/or have. Add your croutons, Caesar dressing (we love Cardini’s from Costco). Add your chicken on top of the salad. Add pepper to taste and lots of parmesan cheese!

And you are done!! It is fast and super easy to make. Perfect for a night when you do not feel like cooking. You can cook the chicken while the hubs works on the salad and you’ll be done in no time!!

Now, on to the cleaning! Sometimes I like it sometimes it drives me nuts!

 

 

After cooking the pan looked disastrous! Looked pretty greasy and gross! But it was super easy to clean, no need to fret. Right after I was done cooking and the skillet cooled down I threw it in the sink and filled it with cold water and left it overnight, but that was lazy me not wanting to clean it that night. Pour most of the water and scrub the skillet with a SOS Tuffy scrub sponge thingy. It will take it off super easy! If there’s any residue left use a 1:1 ratio baking soda and water with your sponge and use some elbow grease and it will look like the picture on the left! This baking soda mix works wonders on the stove and all pots and pans!

I truly loved cooking with my new Xtrema skillet! Just one con about it, it gets hot, due to the ceramic, and the holder doesn’t cover the handle completely. I already burnt the tip of my fingers once but it is nothing major that will stop me from using the skillet. No way, Jose!
